Lemon Chicken


LEMON CHICKEN

Best with chicken breasts but will work with any chicken.

Put butter in frying pan.  Add chicken breasts and brown for five minutes per side.  After the breasts are brown, add 1/4 cup lemon juice and 1/4 cup water.
Cooks covered for 20 minutes at medium heat - add extra lemon juice and water if needed to keep from drying out.

SAUCE
Take one large can of crushed pineapple and one can of mandarin oranges.
Drain juice into large measuring cup and retain fruit till later

In the measuring cup:
Add enough orange juice to the canned fruit juices to equal three cups.
Add 1/4 cup lemon juice.
Add three heaping tablespoons of cornstarch
Add a pinch of salt
Add 1/4 cup vinegar (or to taste)
Add 1/3 cup brown sugar (or to taste)

Mix and bring to a boil till sauce thickens.

Add crushed pineapple to sauce, mix and pour over chicken in pan.
Let simmer for ten minutes or so.

JUST BEFORE SERVING, add the mandarin orange slices and fresh slices of lemon.

Serve with rice.
