Anne's Wacky Cake
1 1/2 cup flour
1 cup sugar
3 tbps cocoa
1 tsp backing powder
1 tsp baking soda
1/2 tsp salt
Mix dry ingredients into ungreased 8" square pan. Make 3 cavities - into
each cavity pour one of the following:
5 tbsp oil., 1 tsp vanilla, 1tbsp white vinegar. Pour one cup of water over
all and mix well. Bake at 350' for 25 minutes or until done.
We usually do this as a DOUBLE recipe and mix it in a bowl instead of in the
pan.
So for DOUBLE, the ingredients are:
3 cups flour
2 cups sugar
6 tbsp cocoa
2 tsp baking powder
2 tsp baking soda
1 tsp salt
10 tbsp oil - 5/8 cup
2 tsp vanilla
2 tbsp white vinegar
2 cups water
(could throw in a handful of dark chocolate chips)
Bake in a 9 x 13 pan at 350' for 35 minutes. DO NOT OVERCOOK
This can be frosted with a chocolate butter cream frosting, or it can be
served with the CARAMEL SAUCE on the SAUCES page. |

Starbuck's Black Bottom Cupcakes

Ingredients:
***Filling:***
8 ounces room temp cream cheese
1/3 cup sugar
1 large egg
pinch salt
1 small bag chocolate chips
***Cake Batter:***
3 cups flour
2 cups sugar
2/3 cup cocoa
2 teaspoons baking soda
1/2 teaspoon salt
2 cups water
2/3 cup oil
2 tablespoons vinegar
2 teaspoons vanilla
Directions:Preheat
oven to 350. Cream the
cream cheese and sugar. Beat in egg and salt. Stir in chocolate chips
Set the filling aside. Mix the cake batter. Sift together flour, sugar,
cocoa, baking soda, and salt Add water, oil, vinegar and vanilla Beat well
and fill cupcake liners 3/4 full with chocolate batter. Drop about a scant
teaspoon of cream cheese mixture on the top of each in the middle. Bake in
preheated 350 oven for approximately twenty minutes. You could halve the
cake batter part if you wished and put a larger dollop of the cream cheese
mixture on top of 18 cupcakes. Makes three dozen
